1 Heat a deep, wide, lidded, non stick pan and spray with the cooking spray. Cook the frozen mushrooms for 5 minutes and then add the onion and sage and cook for 3–4 minutes until starting to brown.
2 Stir in the rice and vegetable stock, cover tightly and cook for 20–25 minutes until the rice is tender. Take off the heat and leave to stand, covered, for 10 minutes. (Do not lift the lid.)
3 Divide between four warmed plates, topping each with 1 tablespoon of yogurt and a sprinkling of paprika.
Tip... If you can’t find exotic frozen mushrooms then use a selection of fresh ones such as porcini, oyster and chestnut mushrooms.
